Discover the essential skill that kept 17th-century communities fed year-round. In this immersive, hands-on workshop, you’ll learn how meat and seafood were preserved before refrigeration and why salting was one of the most important techniques for survival in the colonial Chesapeake.
Working alongside Historic St. Mary’s City interpreters, you’ll explore the history of food preservation, the seasonal rhythms of the colonial diet, and the methods used in homes and commercial settings alike. Then roll up your sleeves as you prepare both dry- and wet-salted meats using authentic 17th-century techniques.
You’ll also sample a variety of foods preserved by our interpreters using period recipes and methods, offering a taste of the past that’s rarely experienced today. The workshop concludes with a question-and-answer session, giving you the opportunity to dive deeper into the history, techniques, and traditions of early Chesapeake foodways.
Whether you’re a history enthusiast, a home cook, or curious about historic foodways, this unique workshop offers an engaging, hands-on experience you won’t soon forget.
This program involves walking on uneven, unpaved terrain and hands-on work with food materials. Common allergens, including dairy, gluten, and seafood, will be present. Program held rain or shine.
