Step into the kitchen of the past for a hands-on exploration of apples in the 17th-century colonial diet.
In this immersive hearth cooking workshop, participants will prepare a selection of historical recipes using apples and other fruits, guided by Robert May’s 1660 classic, The Accomplisht Cook. Explore the culinary, medicinal, and seasonal importance of fruit in the colonial world—especially through the lens of humoral medicine.
Workshop activities include:
Preparing verjuice (from crushed crab apples)
Making apple cider vinegar for pickling
Creating a layered “pumpion pye” with pumpkin and apples
Cooking a variation of “buttered onions” alongside cornbread
